Kleftiko means "stolen". The name of this dish is taken from descendants of Greece who were anti Ottoman; they used to steal goats and lambs and cook them underground hidden ovens; so they don't get caught.
The lamb meat is cooked in oven gradually, with olive oil, mini tomatoes, spices etc.
