Baba ghanoush is a Levantine appetizer/ dip. It is made by finely chopping an baked egg plant, lemon juice, tahini and some other traditional spices. The eggplant is traditionally baked or broiled over an open flame before peeling, so that the pulp is soft and has a smoky taste.
